Pancake and Sausage Bites
Mini breakfast bites made with simple pancake mix, water, and frozen sausage links. Perfect for a quick, kid-friendly breakfast or snack.

- 1 cup pancake mix instant or regular
- ¾ cup water adjust as needed for consistency
- 12 –10 frozen breakfast sausage links cut in three
- Optional: maple syrup for serving
Preheat oven to 375°F and lightly grease a muffin pan or silicone mini muffin mold.
In a medium mixing bowl, combine pancake mix and water. Whisk until smooth and slightly thick but pourable; add a little more water if too thick.
Heat the frozen sausages in the microwave for one minute. Cut the sausages in 3. Spoon a small amount of pancake batter into each muffin cup, just enough to cover the bottom.
Place a sausage half in the center of each cup, then cover with additional batter to fill the cup about ¾ full.
Bake for 15–18 minutes, or until golden brown and a toothpick inserted in the pancake portion comes out clean. Let cool slightly before removing from pan. Serve warm with maple syrup if desired.
Tips for Perfect Pancake and Sausage Bites
Use slightly thick pancake batter to hold sausage in place.
If using frozen sausages, slightly thaw to prevent overcooking the pancake.
Silicone molds make removal easy.
Serve immediately for soft pancakes or store and reheat for a quick breakfast.
