Single-Batch Banana Bread

Ingredients
  

  • 2 cups Bulk Dry Banana Bread Mix
  • 3 ripe bananas mashed
  • 1/2 cup vegetable oil
  • 2 large eggs

Instructions
 

  • Preheat the oven to 350°F. Grease or line a 9x5-inch loaf pan with parchment paper.
  • In a large mixing bowl, mash the ripe bananas until mostly smooth.
  • Add the vegetable oil and eggs, then whisk until well combined.
  • Stir in the Bulk Dry Banana Bread Mix until just combined. Do not overmix.
  • Pour the batter into the prepared loaf pan and spread it into an even layer.
  • Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • Slice and enjoy.

Notes

Use very ripe bananas with plenty of brown spots for the sweetest flavor and best texture.
Avoid overmixing the batter to keep the bread soft and tender.
If the top begins browning too quickly, loosely tent the loaf with aluminum foil during the last 15 to 20 minutes of baking.
Store tightly covered at room temperature for up to 3 days or refrigerate for up to 1 week. The loaf also freezes well for up to 3 months.
