Single-Batch Crepes

These light, delicate homemade crepes come together in minutes using your Bulk Dry Crepe Mix. Fill them with fresh fruit, whipped cream, chocolate, or savory fillings for an easy breakfast, brunch, or dessert.

  • Whisk

  • Nonstick crepe pan or skillet
  • Ladle or 1/4-cup measuring cup
  • Rubber spatula

Ingredients
  

  • 1 cup Bulk Dry Crepe Mix
  • 1 1/2 cups milk
  • 2 large eggs

Instructions
 

  • Add the Bulk Dry Crepe Mix, milk, and eggs to a large mixing bowl.
  • Whisk until the batter is completely smooth and free of lumps.
  • Let the batter rest for 10 minutes to allow the flour to fully hydrate.
  • Heat a lightly greased nonstick crepe pan or skillet over medium heat.
  • Pour about 1/4 cup of batter into the center of the pan, immediately swirling the pan to spread the batter into a thin, even layer.
  • Cook for 1 to 2 minutes, or until the edges begin to lift and the bottom is lightly golden.
  • Carefully flip the crepe and cook for another 30 to 60 seconds.
  • Transfer the cooked crepe to a plate and repeat with the remaining batter.
  • Fill or top the crepes with your favorite sweet or savory ingredients and serve warm.

Notes

Resting the batter creates softer, more tender crepes.
If the batter becomes too thick while resting, whisk in a tablespoon or two of milk.
Grease the pan lightly between crepes as needed to prevent sticking.
Crepes can be made ahead of time and refrigerated for up to 3 days or frozen with parchment paper between each crepe for up to 2 months.
