- 1 cup Bulk Dry Pancake Mix
- 3/4 cup milk
- 1 tablespoon vegetable oil or melted butter
- 1 teaspoon vanilla extract
- 1 large egg
Add the Bulk Dry Pancake Mix to a mixing bowl.
Whisk in the milk, oil, vanilla extract, and egg until just combined. A few small lumps are perfectly fine. Do not overmix.
Let the batter rest for 3 to 5 minutes while you preheat a lightly greased skillet or griddle over medium heat.
Pour about 1/4 cup of batter onto the hot skillet for each pancake.
Cook until bubbles begin to form on the surface and the edges look set, about 2 to 3 minutes.
Flip the pancakes and cook for another 1 to 2 minutes, or until golden brown and cooked through.
Serve warm with butter, maple syrup, fresh fruit, or your favorite pancake toppings.
For extra fluffy pancakes, avoid overmixing the batter.
Allowing the batter to rest for a few minutes helps create a lighter texture.
If the batter is too thick, add a splash of milk until it reaches your desired consistency.
These pancakes freeze well. Allow them to cool completely before storing in a freezer-safe bag for up to 2 months.
