Ingredients
  

  • 1 cup Bulk Dry Pancake Mix
  • 3/4 cup milk
  • 1 tablespoon vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 large egg

Instructions
 

  • Add the Bulk Dry Pancake Mix to a mixing bowl.
  • Whisk in the milk, oil, vanilla extract, and egg until just combined. A few small lumps are perfectly fine. Do not overmix.
  • Let the batter rest for 3 to 5 minutes while you preheat a lightly greased skillet or griddle over medium heat.
  • Pour about 1/4 cup of batter onto the hot skillet for each pancake.
  • Cook until bubbles begin to form on the surface and the edges look set, about 2 to 3 minutes.
  • Flip the pancakes and cook for another 1 to 2 minutes, or until golden brown and cooked through.
  • Serve warm with butter, maple syrup, fresh fruit, or your favorite pancake toppings.

Notes

For extra fluffy pancakes, avoid overmixing the batter.
Allowing the batter to rest for a few minutes helps create a lighter texture.
If the batter is too thick, add a splash of milk until it reaches your desired consistency.
These pancakes freeze well. Allow them to cool completely before storing in a freezer-safe bag for up to 2 months.
