Single-Batch Publix Inspired Sugar Cookies
These soft, buttery Publix-inspired sugar cookies are made with your Bulk Dry Sugar Cookie Mix and rolled in colorful rainbow dot sprinkles for that classic bakery look. They're thick, tender, and perfect for birthdays, holidays, or whenever you're craving a nostalgic bakery-style cookie.

- 1 3/4 cups Bulk Dry Sugar Cookie Mix
- 1/2 cup 1 stick unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup rainbow dot sprinkles
Preheat the oven to 350°F and line a baking sheet with parchment paper.
In a large mixing bowl, combine the Bulk Dry Sugar Cookie Mix, softened butter, egg, and vanilla extract. Mix until a soft dough forms.
Place the rainbow dot sprinkles in a small bowl.
Scoop about 2 tablespoons of dough and roll each dough ball in the rainbow dot sprinkles until evenly coated.
Arrange the cookies about 2 inches apart on the prepared baking sheet.
Gently flatten each cookie slightly with the palm of your hand.
Bake for 10 to 12 minutes, or until the edges are just set. The centers should remain soft and should not brown.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Do not overbake the cookies. They will continue to set as they cool and remain soft in the center.
Rolling the dough in rainbow dot sprinkles before baking creates the signature Publix-inspired bakery appearance.
For evenly sized cookies, use a medium cookie scoop.
Store cookies in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
