Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound chicken breast or chicken thighs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 small onion diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 cloves garlic minced
  • 6 cups chicken broth
  • 1 ½ cups egg noodles
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • Salt and pepper to taste
  • Chicken Boullion powder to taste

Instructions
 

  • Heat olive oil in large pot over medium heat.
  • Add diced onion, carrots, and celery.
  • Cook for 5 minutes until softened.
  • Add minced garlic and cook 1 minute.
  • Add chicken breast to pot.
  • Pour in chicken broth.
  • Add salt, pepper, garlic powder, onion powder, thyme, parsley, chicken Boullion powder and bay leaf.
  • Bring soup to a boil.
  • Reduce heat and simmer 15–20 minutes until chicken is cooked.
  • Remove chicken and shred using two forks.
  • Return shredded chicken to pot.
  • Add egg noodles.
  • Simmer 8–10 minutes until noodles are tender.
  • Remove bay leaf.
  • Taste and adjust seasoning.
  • Serve warm.
